LIME SHRIMP OVER FETTUCCINI
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Laurel Estate in Mesquite, Texas in 1986.

Ingredients
* 8 ounces whole wheat spaghetti (all I had)
* 1 tablespoon extra virgin olive oil
* 2 cups Creamy Celery Soup

* 2 tablespoons fresh lime juice
* 2 teaspoons grated lime rind
* 1/4 teaspoon freshly ground black pepper
* 1 pound shelled cooked shrimp
* 1/4 cup shredded fresh parmesan cheese
Directions
1. Cook pasta in large pot of boiling water for 2 minutes then drain thoroughly in colander.
2. Return to pot and toss with the oil then transfer to square baking dish and preheat broiler.
3. In medium saucepan combine soup, juice,rind and pepper then mix well.
4. Bring to a simmer over medium heat then stir in shrimp and heat through.
5. Pour mixture over pasta in the dish then sprinkle with parmesan and broil 3 minutes.

Sounds delicious. I just got a lovely bag of limes and there is shrimp in the freezer. Hmmm... no cream of celery soup. I can fix that!

Made this today and it came out really well. I put it into two smaller casseroles so I could take one over to Mom for a small birthday present. She was delighted.
Because I chose not to use canned cream of celery soup I'm adding my changes under Alterations. As the soup already contained the needed liquid, including wine, I omitted the milk and wine. Also, there was this bit of ginger root that really loves hanging out with lime, so I pressed about a tsp of the ginger through my garlic press into the mix.
Unfortunately they don't let you edit your alterations so I can't add that to the list as an ingredient. Totally optional anyway.

My husband, lovingly known as Mr. SuchAFuss, cleaned his plate. I didn't figure there was a chance in the world he would eat this. After all there was something green on the spaghetti. Can't think of any higher praise :)
