French Potato Salad

- 2-1/2lbs. fingerling or small new potatoes,halved(quartered if larger) shopping list
- coarse salt and ground pepper shopping list
- 1/4c olive oil shopping list
- 3 Tbs Dijon mustard shopping list
- 2Tbs sherry vinegar shopping list
- 1 small shallot,minced(2Tbs) shopping list
- 3Tbs chopped,fresh parsley shopping list
- 1tsp chopped fresh thyme shopping list
- 1/4 small red onion,sliced shopping list
How to make it
- Place potatoes in large pot;cover with cold water by 1",season generously with salt. Bring to boil;reduce to simmer and cook till tender,about 15 mins. Run under cold water to cool slightly;drain.
- Meanwhile in large bowl,whisk together oil,mustard,vinegar,shallot,parsley and thyme;season with salt and pepper. Add potatoes and onion and toss to combine. Serve at room temperature..
