How to make it

  • Bring a large pot of salted water to a boil.
  • Prepare an ice water bath and set aside.
  • Add Brussels sprouts to boiling water and cook until color sets about six minutes.
  • Transfer to ice bath until cool then drain well and set aside.
  • Place bacon in a large skillet over medium heat and cook until fat renders and bacon is crisp.
  • Add apples and cook stirring occasionally until apples are browned.
  • Add Brussels sprouts and thyme then toss to combine.
  • Season with salt and pepper and serve immediately.
