Old Fashioned Rhubarb Fruit Cake

- 1/2 cup butter, softened shopping list
- 1-1/4 cups sugar, divided shopping list
- 1 egg shopping list
- 1 cup buttermilk shopping list
- 1 teaspoon vanilla extract shopping list
- 2 cups all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 2 cups chopped rhubarb( or part chopped apples, or berries etc ) shopping list
- 1/2 teaspoon ground cinnamon shopping list
- milk TOPPING: shopping list
- 1-1/2 cups milk shopping list
- 1/3 cup sugar shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- In a bowl, cream butter and 1 cup sugar.
- Add egg; beat well.
- Combine buttermilk and vanilla; set aside.
- Combine flour, baking soda and salt; add alternately with buttermilk/vanilla to the creamed mixture.
- Stir in rhubarb.
- Spread in a greased 13-in. x 9-in. baking pan.
- Combine the remaining sugar with cinnamon; sprinkle over batter.
- Bake at 350° for 35 minutes or until cake tests done.
- For topping, combine all ingredients; pour over individual squares.

This is a great "clean the fruit out of the fridge recipe". I love buttermilk in just about anything, so I going to print and save too. Just after I throw my printer at the wall. I have tried everything else to get it to work.
