Use rhubarb alone or mix in some chopped apples, bluberries, strawberries or cherries with the rhubarb 9 x 13 pan recipe

Ingredients
  • 1/2 cup butter, softened
  • 1-1/4 cups sugar, divided
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chopped rhubarb( or part chopped apples, or berries etc )
  • 1/2 teaspoon ground cinnamon
  • MILK TOPPING:
  • 1-1/2 cups milk
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract

Directions
  1. In a bowl, cream butter and 1 cup sugar.
  2. Add egg; beat well.
  3. Combine buttermilk and vanilla; set aside.
  4. Combine flour, baking soda and salt; add alternately with buttermilk/vanilla to the creamed mixture.
  5. Stir in rhubarb.
  6. Spread in a greased 13-in. x 9-in. baking pan.
  7. Combine the remaining sugar with cinnamon; sprinkle over batter.
  8. Bake at 350° for 35 minutes or until cake tests done.
  9. For topping, combine all ingredients; pour over individual squares.

This is a great "clean the fruit out of the fridge recipe". I love buttermilk in just about anything, so I going to print and save too. Just after I throw my printer at the wall. I have tried everything else to get it to work.
