Santa Maria Chicken Recipe
This is a mild, tasty, Italian chicken meal served over spinach pasta or angel hair pasta. Only takes 30 minutes and is always greatly received. Great the next day as well. Named for a church mens group that enjoyed eating in group settings.

Ingredients
  • 3 garlic cloves minced, or a TBS. of chopped garlic
  • olive oil- enough to coat the pan for sauteing
  • 1/2 a lb. of sliced white mushrooms
  • 2 small jars of artichoke hearts in oil
  • 1 large can of diced tomatoes and basil
  • 1/3 cup white wine(dry)
  • 1 tsp. of italian seasonings
  • 3 chicken breasts cut into 3/4 inch chunks
  • flour with salt and pepper added
  • salt to taste

Directions
  1. Dip chicken in seasoned flour.
  2. Add oil to large frying pan and saute chicken until golden in color.
  3. Add all the other ingredients (pour the oil from the artichokes in as well) into the fry pan and cook slowly for 30-40 minutes on low to med.
  4. Add salt to your liking.
  5. Serve with fresh bread, salad, and a bottle of Sangiovase wine.
