Coconut Peanut Chicken

- 3/4 c cocktail peanuts shopping list
- 2 c sweetened coconut shopping list
- 1/4 c flour shopping list
- 2 ggs shopping list
- 1 lb boneless,skinless chicken breasts,in 1" pieces shopping list
- vegetable oil to fry shopping list
- Dipping Sauce: shopping list
- 3 Tbs honey shopping list
- 3 Tbs orange marmelade shopping list
- 1 Tbs soy sauce shopping list
- 1/2 tsp prepared mustard shopping list
How to make it
- Place peanuts in food processor. Whirl until finely chopped. Combine peanuts and coconut in medium bowl. Place flour in second bowl. Lightly beat the eggs in a third bowl.
- Dip chicken in flour,then egg,thenpeanut-coconut mixture.
- Pour oil in skillet (1/2" deep). Heat oil over med. heat. Add chicken to hot oil. Cook 4 to 6 mins,turning once;drain chicken on paper towel.
- Combine all dipping sauce ingredients in small bowl;serve with chicken Enjoy!
