Delicious chicken appetizer that the daughter of a friend introduced me to a long time ago. My grandkids love it. Me too!

Ingredients
  • 3/4 c cocktail peanuts
  • 2 c sweetened coconut
  • 1/4 c flour
  • 2 ggs
  • 1 lb boneless,skinless chicken breasts,in 1" pieces
  • vegetable oil to fry
  • Dipping Sauce:
  • 3 Tbs honey
  • 3 Tbs orange marmelade
  • 1 Tbs soy sauce
  • 1/2 tsp prepared mustard

Directions
  1. Place peanuts in food processor. Whirl until finely chopped. Combine peanuts and coconut in medium bowl. Place flour in second bowl. Lightly beat the eggs in a third bowl.
  2. Dip chicken in flour,then egg,thenpeanut-coconut mixture.
  3. Pour oil in skillet (1/2" deep). Heat oil over med. heat. Add chicken to hot oil. Cook 4 to 6 mins,turning once;drain chicken on paper towel.
  4. Combine all dipping sauce ingredients in small bowl;serve with chicken Enjoy!
