Baked Chicken Parmesan

- 4 large chicken breasts cut in half shopping list
- 4 cups unflavored breadcrumbs (panko -japanese crumbs work well) shopping list
- 1 cup freshly grated parmesan or romano cheese shopping list
- 1/3 cup chopped fresh parsley shopping list
- 1 tsp cayenne pepper (more if you like it really spicy) shopping list
- 1 1/2 cups butter cut into little pieces shopping list
- 1 garlic clove crushed shopping list
- 1 T Dijon mustard shopping list
- 1 1/2 tsp worcestershire sauce shopping list
How to make it
- Pre-heat oven to 350ยบ
- Combine crumbs, cheese, parlsey, salt and pepper
- Place in a dredging pan
- Melt butter over low heat, do not brown
- Stir in the garlic, mustard and Worcestershire sauce for a minute but keep heat low so as not to brown
- Let mixture cool enough to touch but not congeal
- Dip chicken breasts into butter mixture and then into breadcrumb mixture so that the pieces are well coated; pat crumbs with your hands
- Place the pieces of chicken, side by side, in a large shallow baking dish
- Drizzle the rest of the butter mixture over the chicken.
- Baste once or twice during the cooking.
- Bake for 30-45 minutes or until golden brown and the juices run clear when pierced with the tip of a knife
