Easy baked chicken breasts that go well with or without mozarella cheese and sauce

Ingredients
  • 4 large chicken breasts cut in half
  • 4 cups unflavored breadcrumbs (panko -japanese crumbs work well)
  • 1 cup freshly grated parmesan or romano cheese
  • 1/3 cup chopped fresh parsley
  • 1 tsp salt (optional-this recipe works well without the salt)
  • 1 tsp cayenne pepper (more if you like it really spicy)
  • 1 1/2 cups butter cut into little pieces
  • 1 garlic clove crushed
  • 1 T Dijon mustard
  • 1 1/2 tsp Worcestershire sauce

Directions
  1. Pre-heat oven to 350ยบ
  2. Combine crumbs, cheese, parlsey, salt and pepper
  3. Place in a dredging pan
  4. Melt butter over low heat, do not brown
  5. Stir in the garlic, mustard and Worcestershire sauce for a minute but keep heat low so as not to brown
  6. Let mixture cool enough to touch but not congeal
  7. Dip chicken breasts into butter mixture and then into breadcrumb mixture so that the pieces are well coated; pat crumbs with your hands
  8. Place the pieces of chicken, side by side, in a large shallow baking dish
  9. Drizzle the rest of the butter mixture over the chicken.
  10. Baste once or twice during the cooking.
  11. Bake for 30-45 minutes or until golden brown and the juices run clear when pierced with the tip of a knife

Sounds dee-yummy-licious! I have to omit the mustard because of an allergy but I know this will taste just as good, with or without ;) HIGH 5+++
