Lemon Chicken With Basil Sauce Recipe
This is very light, very tasty, very lemony and very good. I like to serve this over angel hair pasta with a nice dinner salad. Enjoy

Ingredients
  • 6 chicken breast fillets
  • 3 rashers bacon
  • 1-1/3 cup fresh breadcrumbs
  • 1-1/2 teaspoons lemon zest
  • 3 teaspoons lemon juice
  • 2 cloves garlic
  • 2 ounces butter
  • 1/2 cup plain flour
  • 1 ounce extra butter
  • Basil Sauce.
  • 3 egg yolks
  • 1-1/2 ounces butter, melted
  • 2/3 cup chicken stock
  • 2/3 cup cream
  • 1/2 cup fresh basil leaves

Directions
  1. Chop bacon finely then sauté in pan until crisp and drain on paper towels.
  2. Pound chicken fillets thin.
  3. Combine bacon, breadcrumbs, zest, juice, crushed garlic and soft butter.
  4. Place in center of each fillet then fold over, pound edges together lightly and toss in flour.
  5. Heat extra butter in pan then add chicken and brown quickly on both sides.
  6. Place in oven dish and bake covered in moderate oven for 10 minutes.
  7. Turn and cook another 10 minutes.
  8. Put egg yolks into a blender then blend while slowly adding melted butter.
  9. Pour in chicken stock, cream and basil then blend until smooth.
  10. Heat without boiling then pour over chicken and serve immediately.
