Carrot Bread Recipe

Ingredients

3 cups all-purpose flour

1 tsp. baking soda

1 tsp ground cinnamon

2 cups sugar

3/4 tsp. salt

1 cup chopped pecans or walnuts

(I used walnuts)

3 large eggs, lightly beaten

2 cups grated carrots

1 cup vegetable oil

1 (8oz) can crushed pineapple, drained

2 tsp. vanilla extract

Directions

Combine the first 6 ingredients, stirring well.

Combine eggs and remaining 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.

Above is where I tossed in a couple of handfulls of raisins

Spoon batter into two greased and floured 8-1/2 x 4-1/2 inch loaf pans. I just used a round pan as is obvious by the picture :-)

Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean.

Cool in pans on wire racks for 10 minutes; remove from pans. Cool on wire racks.

YIELD: 2 loaves

Should call this "it ain't rocket science carrot cake"...lol
