Carrot Bread

- 3 cups all-purpose flour shopping list
- 1 tsp. baking soda shopping list
- 1 tsp ground cinnamon shopping list
- 2 cups sugar shopping list
- 3/4 tsp. salt shopping list
- 1 cup chopped pecans or walnuts shopping list
- (I used walnuts) shopping list
- 3 large eggs, lightly beaten shopping list
- 2 cups grated carrots shopping list
- 1 cup vegetable oil shopping list
- 1 (8oz) can crushed pineapple, drained shopping list
- 2 tsp. vanilla extract shopping list
How to make it
- Combine the first 6 ingredients, stirring well.
- Combine eggs and remaining 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
- Above is where I tossed in a couple of handfulls of raisins
- Spoon batter into two greased and floured 8-1/2 x 4-1/2 inch loaf pans. I just used a round pan as is obvious by the picture :-)
- Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean.
- Cool in pans on wire racks for 10 minutes; remove from pans. Cool on wire racks.
- YIELD: 2 loaves
- Should call this "it ain't rocket science carrot cake"...lol
