How to make it

  • Combine the first 6 ingredients, stirring well.
  • Combine eggs and remaining 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
  • Above is where I tossed in a couple of handfulls of raisins
  • Spoon batter into two greased and floured 8-1/2 x 4-1/2 inch loaf pans. I just used a round pan as is obvious by the picture :-)
  • Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean.
  • Cool in pans on wire racks for 10 minutes; remove from pans. Cool on wire racks.
  • YIELD: 2 loaves
  • Should call this "it ain't rocket science carrot cake"...lol
