Penne with Spinach and Pine Nuts

- 1 clove garlic, minced shopping list
- 1 c. sliced mushrooms shopping list
- 1/2 c. sliced green onion shopping list
- 1/2 c. pine nuts shopping list
- 1/4 c. Parmegiano-Reggiano shopping list
- 2 c. fresh baby spinach leaves, torn shopping list
- 2 T. extra virgin olive oil shopping list
- 2-3 sundried tomatoes, rehydrated & sliced shopping list
- 8 oz. penne, uncooked shopping list
How to make it
- Cook pasta to al dente.
- Heat oil and add mushrooms, garlic, onion and pine nuts.
- Sauté for 2-3 minutes to lightly toast nuts.
- Add spinach and tomatoes, continue to sauté, stirring for 3-4 minutes.
- Toss drained pasta with the vegetables.
- Sprinkle with parmesan cheese.

Pine nuts with penne is one of my favorites and I usually add Pesto to it and some drained marinated artichoke hearts. It is really good.
This looks so good. I don't have any sun-dried tomatoes in my fridge.
