How to make it

  • Cook pasta to al dente.
  • Heat oil and add mushrooms, garlic, onion and pine nuts.
  • Sauté for 2-3 minutes to lightly toast nuts.
  • Add spinach and tomatoes, continue to sauté, stirring for 3-4 minutes.
  • Toss drained pasta with the vegetables.
  • Sprinkle with parmesan cheese.

    Pine nuts with penne is one of my favorites and I usually add Pesto to it and some drained marinated artichoke hearts. It is really good.

    This looks so good. I don't have any sun-dried tomatoes in my fridge.

    What brand do you buy?
