Penne With Spinach And Pine Nuts Recipe
Simple and so good! Perfect with some fabulous bread and a glass of wine.

Ingredients
  • 1 clove garlic, minced
  • 1 c. sliced mushrooms
  • 1/2 c. sliced green onion
  • 1/2 c. pine nuts
  • 1/4 c. Parmegiano-Reggiano
  • 2 c. fresh baby spinach leaves, torn
  • 2 T. Extra Virgin Olive Oil
  • 2-3 sundried tomatoes, rehydrated & sliced
  • 8 oz. Penne, uncooked

Directions
  1. Cook pasta to al dente.
  2. Heat oil and add mushrooms, garlic, onion and pine nuts.
  3. Sauté for 2-3 minutes to lightly toast nuts.
  4. Add spinach and tomatoes, continue to sauté, stirring for 3-4 minutes.
  5. Toss drained pasta with the vegetables.
  6. Sprinkle with parmesan cheese.

Pine nuts with penne is one of my favorites and I usually add Pesto to it and some drained marinated artichoke hearts. It is really good.

This looks so good. I don't have any sun-dried tomatoes in my fridge.
