Salmon And Leeks Recipe
SALMON AND LEEKS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987.

Ingredients
  • 1/2 cup butter
  • 4 salmon fillets
  • 2 leeks finely sliced
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 2 tablespoons finely chopped chervil
  • 1 tablespoon fresh lemon juice

Directions
  1. Preheat oven to 350 then smear 4 large circles of parchment paper with butter.
  2. Place a salmon fillet in center of each one and top with 1/4 of the leeks.
  3. Divide olive oil, wine and chervil among each and season well.
  4. Draw up edges of the paper and fold edges to make packets.
  5. Place on baking sheet and cook 20 minutes.
  6. Open packets carefully and keep juices and leeks with salmon as you serve it with lemon juice.
