How to make it

  • Shake together, the olive oil, vinegar, salt and pepper to make a vinaigrette.
  • Gently toss the watermelon cubes, cheese and parsley with the vinaigrette.
  • Serve cold on Bibb lettuce leaf; garnished with pitted Greek Kalamata olives.

    Hi there Richard,
    It's been a while since making contact with you. So, I've logged on this morning and to my relief, you've been hold the fort well. Nice recipe, I reckon I'll give it a go in the summer, which isn't far of now. Anyhow, I love water melon and I reckon the accompaniment of other such flavors will suit me fine. Good on you.
