Summer Watermelon Salad

- 2 tablespoons of extra virgin olive oil shopping list
- 2 tablespoons of balsamic vinegar shopping list
- salt and white pepper shopping list
- 2 cups of cold, bite-size, seedless watermelon cubes shopping list
- 1/2 cup of coarsely grated of small cubed queso fresco or feta cheese shopping list
- 2 tablespoons of minced fresh Italian parsley shopping list
- 4 black pitted Greek kalamata olives. shopping list
How to make it
- Shake together, the olive oil, vinegar, salt and pepper to make a vinaigrette.
- Gently toss the watermelon cubes, cheese and parsley with the vinaigrette.
- Serve cold on Bibb lettuce leaf; garnished with pitted Greek Kalamata olives.
