Was looking through my cheese recipes to find something to do with Mozzarella and found this....I can't remember the last time I made this but I remember it being a great dish.

Ingredients
  • 6 fresh figs, sliced in half
  • 1/4 cup bourbon
  • 6 dried apricots
  • 1/4 cup brandy
  • 1 tbls. butter
  • 1/4 cup brown sugar, packed
  • 1/4 cup walnuts halves
  • 1 pear, cored and sliced
  • 1 cup balsamic vinegar
  • 4 oz. fresh Mozzarella, cut into chunks
  • 4 oz. Pecorino Romano, cut into chunks
  • 4 oz. Gorgonzola, cut into chunks
  • 4 oz. Provolone, cut into chunks

Directions
  1. Cut figs in half and add them to bourbon, soak overnight
  2. Add apricots to brandy, soak overnight
  3. Preheat oven to 350
  4. In pan, melt butter over medium heat
  5. Stir in brown sugar until dissolved
  6. Toss walnuts in mixture to coat
  7. Take pan off heat and remove walnuts, leaving brown sugar mixture in pan and put walnuts onto baking sheet
  8. Bake walnuts 10-15 minutes or until crisp
  9. Let cool
  10. Add pear slices to brown sugar mixture and cook over medium heat until caramelized
  11. Let cool
  12. In saucepan, heat balsamic vinegar over medium heat and reduce by 2/3 until it reaches syrupy consistency
  13. On a platter, arrange chunks of cheeses around edges
  14. In the center, arrange figs, apricots and pears
  15. Scatter walnuts atop entire platter
  16. Drizzle balsamic reduction over entire platter
  17. Serve loaf of sliced crusty bread along side
  18. ~~Cook time does not include soak time for fruit~~

Oh my - I must be in Heaven! This sounds wonderful. We don't seem to get fresh figs in Washington so I guess I could substitute dried figs. I might make a smaller version for my hubby and me this weekend! Thanks for the wonderful post and high 5 Forks to you!
