Yellow Rice Salad

- 1, 10 3/4 oz pkg yellow saffron rice or similar shopping list
- 2 1/2 cups water or broth or as pkg suggests shopping list
- 2 small glass jars of marinated artickokes, drain and reserve liquid shopping list
- 1 can of water chestnuts drained shopping list
- 20 to 25 green red pimento stuffed olives coarse chopped shopping list
- a few green onions sliced shopping list
- 1 tsp curry powder shopping list
- 1/2 cup mayonnaise shopping list
- salt and pepper to taste shopping list
How to make it
- Cook the yellow rice according to pkg ditrections
- When done, cool to warm
- meanwhile drain artickokes, chop and reserve juice
- Chop scallions, and olives
- Make a dressing from the drained artickoke liquid, mayonnaise and curry powder and blend smooth
- Mix the rice with the artichokes, olives, water chestnuts and scallions
- Mix in the mayo dressing to blend well
- Serve as is or serve chilled
