How to make it

  • Cook the yellow rice according to pkg ditrections
  • When done, cool to warm
  • meanwhile drain artickokes, chop and reserve juice
  • Chop scallions, and olives
  • Make a dressing from the drained artickoke liquid, mayonnaise and curry powder and blend smooth
  • Mix the rice with the artichokes, olives, water chestnuts and scallions
  • Mix in the mayo dressing to blend well
  • Serve as is or serve chilled

    Oh, this sounds wonderful. I adore rice salads. Especially with artichoke added to them.
