Ham And White Cheddar Brunch Eggs Recipe
HAM AND WHITE CHEDDAR BRUNCH EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smitty Estate in Arlington, Texas in 1995.

Ingredients
  • 8 eggs
  • 2-1/3 cup milk
  • 1 tablespoon Dijon mustard
  • 3 tablespoons melted butter
  • 2-1/2 tablespoons flour
  • 2-1/2 cups grated white cheddar cheese
  • 2-1/2 cups fresh asparagus par boiled 2 minutes in boiling salted water
  • 2 cups ham cubed
  • 2 cups fresh mushrooms sliced
  • 9 cups cubed French bread with crusts removed

Directions
  1. Combine all wet ingredients then whisk in flour.
  2. Add asparagus, ham and mushrooms then place bread cubes in greased rectangular baking dish.
  3. Pour egg mixture over bread then cover with plastic wrap and let it sit in refrigerator overnight.
  4. Bake 40 minutes at 350 then remove and top with cheese and bake 20 minutes longer.
  5. Allow to cool slightly then cut and serve.
