Grandmothers Golden Layer Cake Recipe
Simple, light layer cake. Comes from my husband's side of the family (his great-grandmother, I believe). We pile it with fresh whipped cream and blueberries every summer. Fabulous.

Ingredients
  • 2 1/2 cups sifted unbleached flour
  • 1 1/2 cups sugar
  • 3 teaspoons double-acting baking powder
  • 1/4 teaspoon salt
  • 1/2 cup canola oil
  • 1 teaspoon vanilla
  • 1 cup of milk
  • 2 unbeaten eggs

Directions
  1. Sift together flour, sugar, baking powder, and salt.
  2. Add oil, vanilla, and 2/3 c of the milk.
  3. Beat thoroughly.
  4. Add eggs and remaining milk.
  5. Beat at high for 2 minutes.
  6. Pour into 2 round 8" or 9" greased and floured pans (can also do a
  7. rectangle pan).
  8. Bake in 350 oven for 25 - 35 minutes (when tooth pick inserted in the
  9. middle comes out clean).
  10. For topping: ice w/ chocolate or white icing OR cover individual pieces with fresh whipped cream (I do not add sugar, just whip heavy cream until thick) and fresh blueberries.
