Shandy Style Potato Salad

- 6 pounds russet potatoes shopping list
- 3 cup mayonnaise shopping list
- 1/4 cup sweet pickle relish shopping list
- 10 boiled eggs, sliced shopping list
- 3 T. white sugar shopping list
- 1/4 cup chopped white onion shopping list
- 3 T. prepared mustard shopping list
- 1 T. white wine vinegar shopping list
- 3 T. minced celery shopping list
- 1 t. fresh dill, finely chopped shopping list
- 1 teaspoon dried parsley shopping list
- 1 teaspoon ground black pepper shopping list
- salt to taste shopping list
How to make it
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 25 minutes. Drain, cool and chop.
- In a large bowl, combine the potatoes, mayonnaise, sweet pickle, sliced eggs, relish, sugar, onion, mustard, vinegar, celery, parsley, pepper and salt. Mix well, chill and serve.
