Strawberry Mascarpone Pie

- Pie shell: shopping list
- 250g baking flour shopping list
- 125g butter (room temperature) shopping list
- 60g caster sugar shopping list
- 1 medium size egg shopping list
- pinch of salt shopping list
- Filling: shopping list
- 250g mascarpone shopping list
- 2 tablespoons vanilla sugar shopping list
- 500g fresh strawberries shopping list
- 1 tablespoon raspberry jam shopping list
How to make it
- Mix flour, salt and sugar
- work in the butter
- add the egg
- if the dough is too crumbly, add a tablespoon of milk
- coat pie dish with butter
- Spread the dough to form the pie shell
- use a fork to perforate the dough
- bake at 175 degrees centigrade for about 20 minutes; it should be a nice golden colour
- allow to cool
- For the filling, mix the mascarpone with the vanilla sugar
- Vanilla sugar is easily made: cut up 1-2 vanilla pods, mix into 1kg of caster sugar, seal in a jar; after 1 week, you have a fragrant sugar without artificial ingredients
- spread the mascarpone in the pie shell
- Mix raspberry jam with one tablespoon of hot water
- Pour mixture over your strawberries and coat them (gives a nice wet look)
- put the strawberries on top of the mascarpone
- refrigerate
