How to make it

  • Mix flour, salt and sugar
  • work in the butter
  • add the egg
  • if the dough is too crumbly, add a tablespoon of milk
  • coat pie dish with butter
  • Spread the dough to form the pie shell
  • use a fork to perforate the dough
  • bake at 175 degrees centigrade for about 20 minutes; it should be a nice golden colour
  • allow to cool
  • For the filling, mix the mascarpone with the vanilla sugar
  • Vanilla sugar is easily made: cut up 1-2 vanilla pods, mix into 1kg of caster sugar, seal in a jar; after 1 week, you have a fragrant sugar without artificial ingredients
  • spread the mascarpone in the pie shell
  • Mix raspberry jam with one tablespoon of hot water
  • Pour mixture over your strawberries and coat them (gives a nice wet look)
  • put the strawberries on top of the mascarpone
  • refrigerate
