Strawberry Mascarpone Pie Recipe
Delicious pie, ideal as a dessert; prepare the day before. This pie is very rich, so serve small portions

  • Pie shell:
  • 250g baking flour
  • 125g butter (room temperature)
  • 60g caster sugar
  • 1 medium size egg
  • pinch of salt
  • Filling:
  • 250g mascarpone
  • 2 tablespoons vanilla sugar
  • 500g fresh strawberries
  • 1 tablespoon raspberry jam

Directions
  1. Mix flour, salt and sugar
  2. work in the butter
  3. add the egg
  4. if the dough is too crumbly, add a tablespoon of milk
  5. coat pie dish with butter
  6. Spread the dough to form the pie shell
  7. use a fork to perforate the dough
  8. bake at 175 degrees centigrade for about 20 minutes; it should be a nice golden colour
  9. allow to cool
  10. For the filling, mix the mascarpone with the vanilla sugar
  11. Vanilla sugar is easily made: cut up 1-2 vanilla pods, mix into 1kg of caster sugar, seal in a jar; after 1 week, you have a fragrant sugar without artificial ingredients
  12. spread the mascarpone in the pie shell
  13. Mix raspberry jam with one tablespoon of hot water
  14. Pour mixture over your strawberries and coat them (gives a nice wet look)
  15. put the strawberries on top of the mascarpone
  16. refrigerate
