Slightly Sweet Cornbread Recipe
My husband and I had always said we didn't like sweet cornbread - boy, were we wrong. Found this on allrecipes.com.

Ingredients
  • 3/4 cup self-rising cornmeal
  • 1-1/4 cup milk or buttermilk
  • 1 cup self-rising flour
  • 1/4 cup sugar (or 1/3 if using buttermilk)
  • 1 egg, lightly beaten
  • 1/4 cup oil

Directions
  1. Heat oven to 400, then turn down to 350 when ready to cook bread.
  2. Grease an 8" cast iron skillet or cake pan.
  3. In a small bowl, combine cornmeal and milk; let stand for 5 minutes.
  4. In a large bowl, whisk together flour and sugar. Add eggs, oil, and cornmeal mixture.
  5. Bake for 30-40 minutes. (The time and temperature depends a great deal on your oven.)
