Slightly Sweet Cornbread Recipe

Ingredients

3/4 cup self-rising cornmeal

1-1/4 cup milk or buttermilk

1 cup self-rising flour

1/4 cup sugar (or 1/3 if using buttermilk)

1 egg, lightly beaten

1/4 cup oil

Directions

Heat oven to 400, then turn down to 350 when ready to cook bread.

Grease an 8" cast iron skillet or cake pan.

In a small bowl, combine cornmeal and milk; let stand for 5 minutes.

In a large bowl, whisk together flour and sugar. Add eggs, oil, and cornmeal mixture.

Bake for 30-40 minutes. (The time and temperature depends a great deal on your oven.)
