Thai Red Curry Paste Recipe
Much better than buying a red curry sauce from the supermarket.

Ingredients
  • 10 dried red chillis, soaked in hot water and roughly chopped
  • 3cm Ginger, peeled and finely chopped
  • 2 Lemongrass stalks, outer leaves removed, finely chopped
  • Zest of 2 Limes
  • 1 Tspn Chopped shallots
  • 1 Tspn Chopped Garlic
  • 1 tsp light brown sugar
  • Salt and white pepper
  • Vegetable Oil

Directions
  1. Grind each ingreidient, adding each one, one after the other, in a pestle and mortar.
  2. Season with Salt and Pepper and stir in enough oil to form a paste.
  3. This will keep for a few weeks on the fridge.
