Thai Red Curry Paste

- 10 dried red chillis, soaked in hot water and roughly chopped shopping list
- 3cm ginger, peeled and finely chopped shopping list
- 2 lemongrass stalks, outer leaves removed, finely chopped shopping list
- Zest of 2 limes shopping list
- 1 Tspn Chopped shallots shopping list
- 1 Tspn Chopped garlic shopping list
- 1 tsp light brown sugar shopping list
- salt and white pepper shopping list
- vegetable oil shopping list
How to make it
- Grind each ingreidient, adding each one, one after the other, in a pestle and mortar.
- Season with Salt and Pepper and stir in enough oil to form a paste.
- This will keep for a few weeks on the fridge.
