Butter Pecan White Chocolate Cookies Recipe
These are so good. I got this recipe from a co-worker several years ago and just made a batch yesterday. They are incredible and so light and airy. Yummers.

Ingredients
  • 1 cup unsalted butter softened
  • 1-1/2 cups firmly packed light brown sugar
  • 1 egg at room temperature
  • 1 teaspoon vanilla
  • 2-1/2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 12 ounce package white chocolate chips
  • 1 cup chopped pecans
  • 1 cup powdered sugar

Directions
  1. Cream butter then beat in brown sugar, egg and vanilla.
  2. Combine flour, baking soda, cinnamon, ginger and salt then blend into butter mixture.
  3. Fold in chocolate chips and pecans then refrigerate until firm.
  4. Preheat oven to 375 then lightly grease baking sheets.
  5. Break off small pieces of dough and roll between palms into 1" rounds.
  6. Dredge rounds in powdered sugar then arrange rounds on prepared sheets 2" apart.
  7. Bake 10 minutes then let cool 5 minutes on sheets and transfer to racks and cool completely.
