Mexi-Lime Grilled Shrimp

- juice of 4 key limes shopping list
- 1/2 BOTTLE Dark Mexican beer shopping list
- 1 1/2 TBSP extra virgin olive oil or 2TBSP melted butter shopping list
- 3 chipotle chiles, canned, mashed well, w/ 1 TBSP of adobo sauce from the can shopping list
- 1/4 TSP kosher salt shopping list
- 2 cloves Minced garlic shopping list
- 1/2 TSP Mexican oregano shopping list
- 1/2 tsp onion powder shopping list
- 1/8 tsp paprika shopping list
- ground coriander shopping list
- 1 1/2 TBSP chopped cilantro or parsley shopping list
- 2lbs jumbo shrimp, cleaned and deveined shopping list
How to make it
- Whisk all ingredients together, except the paprika.
- Drizzle the sauce over fish, shrimp, or vegetables while grilling. Sprinkle with paprika and serve.
- Drizzle marinade over jumbo shrimp and grill over medium heat, approximately 2 minutes per side.
- Use more marinade when you turn the shrimp.
- To test whether the shrimp are done, wait until they change color and cut one in half.
- Center should be hot and white, not translucent.
