This is a flavor packed grilling sauce that works for fish, shrimp, veggies, and chicken. Found online a couple of years ago.

Ingredients
  • Juice of 4 Key Limes
  • 1/2 BOTTLE Dark Mexican beer
  • 1 1/2 TBSP Extra Virgin olive oil or 2TBSP melted butter
  • 3 Chipotle chiles, canned, mashed well, w/ 1 TBSP of adobo sauce from the can
  • 1/4 TSP Kosher salt
  • 2 CLOVES Minced garlic
  • 1/2 TSP Mexican oregano
  • 1/2 tsp onion powder
  • 1/8 tsp Paprika
  • ground coriander
  • 1 1/2 TBSP chopped cilantro or parsley
  • 2lbs jumbo shrimp, cleaned and deveined

Directions
  1. Whisk all ingredients together, except the paprika.
  2. Drizzle the sauce over fish, shrimp, or vegetables while grilling. Sprinkle with paprika and serve.
  3. Drizzle marinade over jumbo shrimp and grill over medium heat, approximately 2 minutes per side.
  4. Use more marinade when you turn the shrimp.
  5. To test whether the shrimp are done, wait until they change color and cut one in half.
  6. Center should be hot and white, not translucent.
