STRAWBERRY CAKE ROLL

- Ingredients: shopping list
- ½ cup all-purpose flour shopping list
- ¼ cup cornstarch shopping list
- 1 tsp. baking powder shopping list
- 2 large eggs, separated shopping list
- 1 Tbs. vegetable oil shopping list
- 2/3 cup granulated sugar, divided shopping list
- 2egg whites shopping list
- 1Tbs. Confectioner's sugar shopping list
- For Filling: shopping list
- 1 cup all-fruit strawberry preserves shopping list
- 2 cups sliced strawberries shopping list
How to make it
- 1 Preheat oven to 350º. Line a jelly-roll pan with waxed paper. Spray with vegetable cooking spray. In a medium bowl, mix flour, cornstarch, and baking powder.
- 2 In a large mixing bowl, using an electric mixer set on medium speed, beat egg yolks, oil, and ½ cup of granulated sugar until light and fluffy. At low speed, beat in flour mixture.
- 3 Using clean beaters, beat 4 eggwhites at high speed until frothy. Beat in remaining granulated sugar until stiff, but not dry, peaks form. Fold one-third of beaten egg whites into flour mixture; fold in remaining egg whites.
- 4 Spread batter into prepared pan. Bake until golden, about 12 minutes. Sprinkle confectioners' sugar over a clean cloth. Turn cake out onto cloth and remove waxed paper. Starting with a short edge, roll up cake with cloth. Place seam-side down, on a wire rack and cool.
- 5 To prepare filling, unroll cake; spread with strawberry preserves and strawberries. Re-roll cake, place on a serving platter.
