Chicken with Tangerine Honey Glaze

- 3 c tangerine juice or tangerine-orange juice(not from concentrate) shopping list
- 5 fesh thume sprigs shopping list
- 1/4 c clover honey shopping list
- salt and pepper shopping list
- 3 TB. Spanish paprika shopping list
- 1 TB ground cumin shopping list
- 1 Tb dry mustard powder shopping list
- 2 tsp. ground fennel seeds shopping list
- 2 Tb. canola oil shopping list
- 4 boneless skinless chicken breasts (about 8 oz. ea) shopping list
- 2 green onions,thinly slice,for garnish shopping list
How to make it
- Combine juice and thyme in med. saucepan and bring to boil over high heat. Cook,stirring occasionally,until thickened and reduce to about 1/2 c;remove thyme stems and discard. Whisk in honey till incorporated and season with 1/2 tsp. of salt and 1/4 tsp pepper. Transfer to a bowl and let cool to room temperature.
- Heat grill to med -high.
- Stir together paprika,cumin,mustard powder,fennel and 1 tsp each of the salt and black pepper in small bowl.. Brush both sides of chicken with oil and season with salt and pepper.
- Rub the top of each breast with some spice rub and place on grill,rub side down. Cook without touching till lightly golden brown and crust has formed,3 to 4 mins. Turn breasts over ,brush tops liberally with some of the glaze;flip them and continue cooking until theermometer reads 155 degrees.
- Remove from grill,brush the spice rub side with more glaze,tent loosely with foil,and let rest 5 mins. before serving.
