How to make it

  • Combine juice and thyme in med. saucepan and bring to boil over high heat. Cook,stirring occasionally,until thickened and reduce to about 1/2 c;remove thyme stems and discard. Whisk in honey till incorporated and season with 1/2 tsp. of salt and 1/4 tsp pepper. Transfer to a bowl and let cool to room temperature.
  • Heat grill to med -high.
  • Stir together paprika,cumin,mustard powder,fennel and 1 tsp each of the salt and black pepper in small bowl.. Brush both sides of chicken with oil and season with salt and pepper.
  • Rub the top of each breast with some spice rub and place on grill,rub side down. Cook without touching till lightly golden brown and crust has formed,3 to 4 mins. Turn breasts over ,brush tops liberally with some of the glaze;flip them and continue cooking until theermometer reads 155 degrees.
  • Remove from grill,brush the spice rub side with more glaze,tent loosely with foil,and let rest 5 mins. before serving.
