How to make it

  • Combine cabbage, onion, green pepper, and carrots in a large bowl and sprinkle with sugar. Set aside. Combine remaining ingredients in a pot and boil 3 minutes. Pour over vegetables, stirring well. Chill overnight. Enjoy.

    I had a coleslaw like this years ago and loved it. I don't like the kind with mayo so I'm thrilled to finally have this recipe. thank you.

    This is similar to my crispy Coleslaw, which is posted, except no carrots or onions and add a jar of pimentos. The cabbage and bell pepper are covered with the boiling water with only salt and soak for an hour, then drained and other ingredients are added with pimento folded in at last. Either way, the technique gives you a slaw that will keep crispy for days in the refrigerator. Good stuff.
