Rum And Cherry Cola Marble Cake

- 1/2- cup Coke shopping list
- 1/2- cup dried sour cherries shopping list
- 3- ounces semi-sweet chocolate shopping list
- 1- ounce unsweetened chocolate shopping list
- 2- cups all purpose flour shopping list
- 2- teaspoons baking powder shopping list
- 1/4- teaspoon salt shopping list
- 3/4- cup ( 1 1/2 sticks ) unsalted butter at room temperature shopping list
- 1 1/2- cups sugar shopping list
- 4- large eggs shopping list
- non-stick cooking spray shopping list

- for the rum and cola syrup.......... shopping list
- 1 - cup Coke shopping list
- 1/4 - cup dark rum shopping list
- 1/4- cup sugar shopping list
How to make it
- In a small saucepan , bring the cola and dried cherries to a boil
- remove from heat and set aside for 30 minutes
- melt chocolates in a completely dry bowl or double broiler set over barely simmering water
- set aside in a warm place until ready to use..........
- set the rack in the middle of the oven and preheat to 375 degrees f.
- lightly coat a 6- cup loaf pan or bundt pan with the nao-stick cooking spray and line the bottom with a rectangle of parchment paper
- iinto a large bowl , sift the flour, baking powder, and salt together thress times
- in a large bowl , beat butter and sugar togehter at high speed on the mixer for 15 seconds, until combined
- add eggs , one at a time, beating until each is incorporated
- continue beating until light and fluffy, about 6 more minutes.....
- with the mixer on its lowest setting , gradually beat in the flour mixture
- fold the cherries and their liquid into half of the batter and spread it in the bottom of the pan
- fold the melted chocolate into the remaining batter and add it to the pan
- bake at 375 degrees f for 30 minutes until springy and set
- make rum and cola syrup
- in a small saucepan boil the cola, rum and sugar until all is dissolved
- remove the cake from the pan by inverting it onto a serving plate and soak it with the syrup.............. and serve ...........
- makes 8 servings
