This is an compliation of several old-school rum cakes ....cola as it turns out is a darn good flavor for cakes and compliments the chocolate well....i hope you enjoy this ................... courtesy of retro desserts

Ingredients
  • 1/2- cup coke
  • 1/2- cup dried sour cherries
  • 3- ounces semi-sweet chocolate
  • 1- ounce unsweetened chocolate
  • 2- cups all purpose flour
  • 2- teaspoons baking powder
  • 1/4- teaspoon salt
  • 3/4- cup ( 1 1/2 sticks ) unsalted butter at room temperature
  • 1 1/2- cups sugar
  • 4- large eggs
  • non-stick cooking spray
  • _________________________________
  • for the rum and cola syrup..........
  • 1 - cup coke
  • 1/4 - cup dark rum
  • 1/4- cup sugar

Directions
  1. In a small saucepan , bring the cola and dried cherries to a boil
  2. remove from heat and set aside for 30 minutes
  3. melt chocolates in a completely dry bowl or double broiler set over barely simmering water
  4. set aside in a warm place until ready to use..........
  5. set the rack in the middle of the oven and preheat to 375 degrees f.
  6. lightly coat a 6- cup loaf pan or bundt pan with the nao-stick cooking spray and line the bottom with a rectangle of parchment paper
  7. iinto a large bowl , sift the flour, baking powder, and salt together thress times
  8. in a large bowl , beat butter and sugar togehter at high speed on the mixer for 15 seconds, until combined
  9. add eggs , one at a time, beating until each is incorporated
  10. continue beating until light and fluffy, about 6 more minutes.....
  11. with the mixer on its lowest setting , gradually beat in the flour mixture
  12. fold the cherries and their liquid into half of the batter and spread it in the bottom of the pan
  13. fold the melted chocolate into the remaining batter and add it to the pan
  14. bake at 375 degrees f for 30 minutes until springy and set
  15. make rum and cola syrup
  16. in a small saucepan boil the cola, rum and sugar until all is dissolved
  17. remove the cake from the pan by inverting it onto a serving plate and soak it with the syrup.............. and serve ...........
  18. makes 8 servings
