How to make it

  • Preheat oven to 350 degrees.
  • Heat oil in a large skillet over med. heat. Add onion and garlic;cook and stir till onion translucent. Stir in chili powder and cumin,cook about 30 seconds. Add the rice,chicken broth and tomato paste and bring to boil.
  • Transfer to a 1 qt. casserole dish and cover with aluminum foil or a lid.
  • Bake 35 to 40 mins.,or until liquid has been absorbed and rice is tender. Let rest 3 to 5 mins before serving.
