Ingredients
  • 2-1/2 cups all purpose flour
  • 1/2 cup plus 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 heaping cup coarsely chopped pecans
  • 1 cup eggnog
  • 1 egg
  • 1/4 cup melted butter
  • 2 teaspoons vanilla
  • 1 teaspoon rum flavoring
  • 1 heaping cup fresh cranberries

Directions
  1. Mix together flour, sugar, baking powder, nutmeg, salt and pecans.
  2. Mix eggnog, egg, butter, vanilla, rum flavoring and cranberries until well combined.
  3. Combine wet and dry ingredients stirring as few strokes as possible.
  4. Grease muffin tins liberally with softened butter then fill 2/3 full and bake 20 minutes at 375.
