Ingredients
  • 2 Medium Sweet Potatoes,cooked and mashed ( 1-1/2 Cups)
  • 1/2 Cup Buttermilk
  • 1/3 Cup Butter,melted
  • 2 Farm Fresh Eggs
  • 1 Cup Yellow Cornmeal
  • 1 Cup Flour
  • 1/3 Cup Sugar
  • 2-1/2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Allspice
  • 1/2 teaspoon Salt

Directions
  1. ~Brush the cast iron corn stick pans with oil and heat in oven for about 10 minutes.~
  2. In bowl,combine sweet potatoes,buttermilk,butter,and eggs,mix until smooth.
  3. In another bowl,combine remaining ingredients.
  4. Add to sweet potato mixture,stirring just until combined.
  5. Fill the prepared pans 2/3 full with the batter.
  6. Bake in 400 degree oven for 15 to 20 minutes(or) until golden brown,around the edges.
  7. ~Serve warm with honey butter~

OH YEAH! I will be making this-I use my cast iron skillet for cornbread-but the sweet potatoes will be incredible. Great post-High 5!
