Corn In Cast Iron

- 2 Medium sweet potatoes,cooked and mashed ( 1-1/2 Cups) shopping list
- 1/2 Cup buttermilk shopping list
- 1/3 Cup butter,melted shopping list
- 2 Farm Fresh eggs shopping list
- 1 Cup yellow cornmeal shopping list
- 1 Cup flour shopping list
- 1/3 Cup sugar shopping list
- 2-1/2 teaspoons baking powder shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon allspice shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Brush the cast iron corn stick pans with oil and heat in oven for about 10 minutes.
- In bowl,combine sweet potatoes,buttermilk,butter,and eggs,mix until smooth.
- In another bowl,combine remaining ingredients.
- Add to sweet potato mixture,stirring just until combined.
- Fill the prepared pans 2/3 full with the batter.
- Bake in 400 degree oven for 15 to 20 minutes(or) until golden brown,around the edges.
- Serve warm with honey butter.
