Ingredients
- 1½ cups maple sugar shopping list
- 2½ cups gluten-free flour blend of choice (or recipe below) shopping list
- ½ teaspoon cream of tartar shopping list
- ½ teaspoon baking soda shopping list
- ½ teaspoon baking powder shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon ground cinnamon shopping list
- ¼ teaspoon ground nutmeg shopping list
- 1/8 teaspoon ground cloves shopping list
- 1 cup oil shopping list
- 4 extra-large eggs shopping list
- 2 cups grated raw carrots shopping list
- 1 (20-ounce) can crushed pineapple, well drained shopping list
- 1½ cups sugar-free dry coconut shopping list
- 1½ cups chopped nuts, optional shopping list
- cream cheese frosting shopping list
- 6 ounces cream cheese shopping list
- ¼ cup maple sugar shopping list
- ¼ teaspoon vanilla shopping list
- 2-3 tablespoons heavy cream shopping list

- Makes 3 Cups shopping list
- 2 cups white or brown rice flour shopping list
- 2/3 cup potato starch shopping list
- 1/3 cup tapioca flour shopping list
- Blend all ingredients until well combined. Store unused portion in the refrigerator in a tightly covered container. shopping list
How to make it
- Preheat oven to 350 degrees. Grease a 9x13-inch pan.
- Mix dry ingredients together and make a well. Add oil and eggs and beat everything until just blended. Add remaining ingredients. Pour into prepared pan.
- Bake in preheated oven for 45 to 60 minutes until done. Remove from oven and cool.
- To make frosting, whip together cream cheese, maple sugar, vanilla and heavy cream just enough to reach desired consistency. Spread frosting over cake and serve.
