How to make it

  • Saute onions if using
  • Dump meat in pan and reheat with El Pato, chiles, and chile powder
  • Bring to simmer
  • Meanwhile mix the Jiffy mix with the sour cream, cottage cheese, and about 1/2 cup of the cheddar
  • Put half of the cornbread mixture in bottom of greased 8x8 casserole
  • Top with the meat mixture
  • Put the rest of the cheese over that, and top with remaining corn bread mix.
  • Bake in 350* oven for approximately 35 minutes
  • Let sit a bit and cut into squares to serve or just blop it on your plate
  • Top with sour cream and cilantro (optional) and more salsa too.....
