How to make it

  • In large saucepan, combine zucchini, broth, green onions, salt and pepper.
  • Bring to a boil.
  • Reduce heat and simmer 20 to 25 minutes or until zucchini is very soft. Remove from heat.
  • Let stand 10 to 15 minutes.
  • Transfer carefully to food processor.
  • Add cream cheese, sour cream and dill.
  • Process until smooth.
  • Transfer to bowl. Cover and chill ovenight.
  • May be garnished with additonal fresh dill or parsley if desired.

    nice recipe, hope you don't mind I downloaded a pic of the zucchini from my garden, this monster was hiding at the back, perfect for your recipe lol
