How to make it

  • Heat oven to (450°F).
  • Don't peel the potatoes, boil until they are cooked, without being too soft.
  • Drain, allow to dry a bit, rub with EVOO, place on lined baking sheet or baking stone.
  • Use a potato masher to squash each potato flat, until it is twice its original diameter.
  • Brush the tops with olive oil and scatter with sea salt, pepper and herbs.
  • Bake on the top shelf of the oven for 20 to 25 minutes until crisp and golden.
  • I don't know that it really takes 60 minutes. I just guessed because the size or your potatoes will dictate how long the boiling process will take.
