Crash Hot Potatoes

- 16 baby red potatoes, scrubbed shopping list
- 1-2 tbsp olive oil shopping list
- 1 tsp sea salt shopping list
- fresh ground pepper shopping list
- 1 tbsp fresh rosemary, rough chop shopping list
How to make it
- Heat oven to (450°F).
- Don't peel the potatoes, boil until they are cooked, without being too soft.
- Drain, allow to dry a bit, rub with EVOO, place on lined baking sheet or baking stone.
- Use a potato masher to squash each potato flat, until it is twice its original diameter.
- Brush the tops with olive oil and scatter with sea salt, pepper and herbs.
- Bake on the top shelf of the oven for 20 to 25 minutes until crisp and golden.
- I don't know that it really takes 60 minutes. I just guessed because the size or your potatoes will dictate how long the boiling process will take.
