One of my favorite comfort-food desserts is rice pudding. The flavors are kicked up with coconut, lime, macadamia nuts & mango.

Ingredients
  • 1 cup medium Grain Rice
  • 2 cans (13-14 oz., each) light unsweetened coconut milk
  • 2-1/2 cups milk
  • 1 cup sugar
  • 2-1/2 tsp. lime zest
  • Toasted sweetened flaked coconut
  • Macadamia nuts
  • mango - diced

Directions
  1. In 3 quart heavy saucepan, bring coconut milk, milk, sugar and rice to a gentle boil; reduce heat and simmer uncovered for 25 minutes, stirring occasionally. Remove from heat and add lime zest. Serve at room temperature or chilled. Sprinkle with toasted coconut, macadamias & diced mangos, if desired.
