How to make it

  • In large bowl combine flour, sugar, cinnamon and salt.
  • Cut in butter with fork until crumbly
  • Reserve three cups and cover the bottom of cake pan with the remaining crumbs.
  • Pat crumbs into the bottom of pan.
  • Bake at 375 for 13 minutes.
  • For filling place zucchini, lemon in a large sauce pan and bring to boil.
  • Boil 6 minutes.
  • Stir in sugar, cinnamon,and nutmeg.
  • Cover and simmer for 5 minutes.
  • Spoon over crust and cover with reserved crumbs.
  • Bake 40-45 minutes @375.

    I made it and most think it is apple sqs. It tasts just like apple pie sqs.

    Sounds new and interesting! I need to try this. And to Sandygalesmith, hmmmmm....if you don't like zucchini, then just try clicking on lemon squares, or something other than zucchini next time. Just a suggestion.
