zucchini squares

- 4 cups flour shopping list
- 2 cups sugar shopping list
- 1/2 t. cinnamon shopping list
- 1/2 t. salt shopping list
- 11/2 cups cold butter shopping list
- Filling shopping list
- 8-10 cups cubed zucchini, pared and cut. shopping list
- 2/c lemon juice shopping list
- 1 cup sugar shopping list
- 1 t. ground cinnamon shopping list
How to make it
- In large bowl combine flour, sugar, cinnamon and salt.
- Cut in butter with fork until crumbly
- Reserve three cups and cover the bottom of cake pan with the remaining crumbs.
- Pat crumbs into the bottom of pan.
- Bake at 375 for 13 minutes.
- For filling place zucchini, lemon in a large sauce pan and bring to boil.
- Boil 6 minutes.
- Stir in sugar, cinnamon,and nutmeg.
- Cover and simmer for 5 minutes.
- Spoon over crust and cover with reserved crumbs.
- Bake 40-45 minutes @375.

Sounds new and interesting! I need to try this. And to Sandygalesmith, hmmmmm....if you don't like zucchini, then just try clicking on lemon squares, or something other than zucchini next time. Just a suggestion.
