Crab Artichoke Potato Croquettes Recipe

These are so yummy -- I wanted to provide a link to watch the video.

Ingredients
- Canned artichoke bottoms, chopped
- 1/2 lb *crab meat
- 1 potato, cooked & mashed
- 1 egg, beaten
- cayenne, to taste
- Salt & pepper, to taste
- panko
- olive oil -- for sauteeing
- ----------
- Avocado slices-- optional
- Lemon Wedges -- optional
Directions
- Combine all ingredients together, except panko & oil. Form into little cakes/croquettes. Dust with panko on both sides. Fry in oil till crispy and golden brown. Serve with avocado slices & lemon wedges, if desired.
