Chaiwalla Tomato Pie Recipe
From the Chaiwalla Tea House, in Connecticut, this pie is tasty and fancy looking, while relatively simple to make.

Ingredients
  • Crust
  • 2 c flour
  • 1/2 c butter (1 stick)
  • 4 t baking powder
  • 3/4 c milk (adjust for biscuit-dough consistency)
  • Filling
  • 2 pounds fresh tomatoes, peeled and sliced (or 2 28 oz cans plum tomatoes)
  • chopped basil, chives, or scallions
  • 1 1/2 c sharp cheddar
  • 1/3 c mayonnaise
  • 2 T lemon juice

Directions
  1. Combine ingredients for a crust:
  2. Roll bottom crust on floured surface and line 9" pie plate.
  3. Fill crust with thinly sliced tomatoes.
  4. Sprinkle with chopped herbs.
  5. Cover with 1 cup grated cheddar.
  6. Mix mayonnaise with lemon juice and drizzle over cheese.
  7. Cover with remaining 1/2 c cheddar.
  8. Roll out remaining crust. Cover pie and pinch the edges to seal.
  9. Cut steam vents.
  10. Bake at 400 for about 25 minutes.
  11. If not serving directly from the oven, re-heat before serving to melt the cheese.

Love tomatoes! This sounds different and delicious! I wonder if I should remove the seeds from the fresh tomatoes, they contain a lot of juice.


Do you think the mayonnaise and lemon juice mixture acts as a binder. This sounds delicious THX for posting. :)


I know someone who had tasted this pie, filling was not overly firm but quite delcious. Does not resemble a quiche either.
