Sausage And Bean Soup

- 1 carton chicken broth shopping list
- 1 large can (28ozs) tomatoes, diced shopping list
- 1 can (14 oz) white beans (Northern or Tuscan or whatever you’re in the mood for), drained and rinsed shopping list
- About a pound (could be less but not much more, depending on your mood) of turkey or pork, if you don't mind the fat, sausage (not precooked) shopping list
- A small vidalia onion shopping list
- Couple of cloves of garlic shopping list
- Couple tbls of olive oil shopping list
- Fresh oregano shopping list
- Fresh chives shopping list
- salt and pepper to taste shopping list
How to make it
- In a soup pot, combine broth, tomatoes and beans.
- Bring to a low boil.
- Add salt and pepper to taste.
- Roughly chop onion and sauté in separate pan, with crushed garlic on med. low. Add olive oil and a little salt to make the onions sweat.
- After five minutes, cut turkey sausage out of the casings and crumble in with onions and garlic.
- Sauté on medium till meat is brown.
- Drain Sausage.
- Add sausage mixture to boiling soup base.
- Toss in a handful or two (again whatever suits your mood) of small pasta (orzo, Ditali, Farfalline) and let boil till pasta is tender.
- In last five minutes before pasta is done chop up some fresh chives and oregano and add to your liking.
