How to make it

  • In a soup pot, combine broth, tomatoes and beans.
  • Bring to a low boil.
  • Add salt and pepper to taste.
  • Roughly chop onion and sauté in separate pan, with crushed garlic on med. low. Add olive oil and a little salt to make the onions sweat.
  • After five minutes, cut turkey sausage out of the casings and crumble in with onions and garlic.
  • Sauté on medium till meat is brown.
  • Drain Sausage.
  • Add sausage mixture to boiling soup base.
  • Toss in a handful or two (again whatever suits your mood) of small pasta (orzo, Ditali, Farfalline) and let boil till pasta is tender.
  • In last five minutes before pasta is done chop up some fresh chives and oregano and add to your liking.
