Ingredients

How to make it

  • Beat eggs and stir into ricotta.
  • Add onion, parsley, salt and pepper.
  • Put one pie crust into pie plate. Spread 1/2 of mixture into shell.
  • Top with 1/2 of mozzarella, 1/2 of tomato sauce, peppers and mushrooms.
  • Repeat layers.
  • Cover with top pie crust.
  • Slit the crust to allow steam to escape.
  • Bake at 375 degrees for 50 minutes.
  • *To make this a little hardier, you could add chopped pepperoni or cooked sausage to the layers.

    wow this sounds wonderful, this is the type of recipe that makes me wish that I didn't already have dinner plans tonight!! But I hope to be making this some time next week. I'll definitely add some meat to the mixture, like you said, to make it heartier!
