Was at a friends house the first time I had this and it is great...Couldn't leave without the recipe. Serve with tortilla chips

Ingredients
  • Olive oil
  • 1 onion, chopped
  • 1 14.5 oz. can diced tomatoes
  • 1 4 oz. can green chilies, drained
  • 1 10 oz. pkg. frozen spinach, thawed and drained
  • 1 8 oz. pkg. cream cheese, softened
  • 1 cup half & half
  • 1 1/2 cups Mexican blend or Monterey Jack cheese
  • 1 tbls. red wine vinegar
  • 2 tbls. sour cream
  • Salt and pepper to taste

Directions
  1. Preheat oven to 400
  2. In pan, heat olive oil and saute onion until tender
  3. Add tomatoes and chilies and then cook a minute or so
  4. In large mixing bowl, add all ingredients and stir until blended completely
  5. Put mixture in an 8x8 baking dish
  6. Bake 35 minutes or so
