Summer Squash Casserole

- 2 medium yellow summer squash, cut into 1/4" slices shopping list
- 1 small onion, thinly sliced shopping list
- 1 egg shopping list
- 1 c. sour cream shopping list
- 1/4 c. garlic ranch dressing shopping list
- 3/4 c. sharp cheddar cheese (or whatever you have on hand) shopping list
- parsley to taste shopping list
- 1/2 c. panko bread crumbs shopping list
- 1 Tbsp. parmesean cheese shopping list
- 1/2 tsp. paprika shopping list
- Melted butter shopping list
How to make it
- In a large bowl add sour cream, dressing, cheese, parsley and egg.
- Mix well.
- Fold in squash and onion.
- Pour mixture into an 8"x8" baker.
- In a small bowl add bread crumbs, parmesean cheese and paprika.
- Mix well.
- Spread on top of vegetable.
- Add melted butter on top of casserole to help brown.
- Bake at 350 degrees for 30 minutes; until bubbly and browned.
