  • Method:
  • In a large bowl, combine eggs, flour, onion and pepper; set aside.
  • Pat the shredded potatoes dry with paper towels. Stir into egg mixture. In a large non-stick skillet, over medium-high heat, melt 1 ½ Tbs. margarine. For each pancake, spoon 1/3 cup of the potato mixture into skillet, spreading into a 4-inch circle. Cook for 3 minutes each side or until golden; remove and keep warm. Repeat with the renaming mixture, using the melted margarine as need to make 12 pancakes. Serve hot with applesauce on the side. Garnish with chives.

    I love potato latkes, and I have made them with brisket on Xmas but the last time I did, it was just too labor intensive, cuz you have to make them right before serving. Too bad! No, I'm not Jewish, but I have posted a really great brisket recipe I took from Cook's Illustrated mag. I 'm subbing butter for the margarine..otherwise a 5 forker!

    Wonderful post! I make these on request from my husband at least once a month. We enjoy these with sour cream instead of apple sauce and bacon on the side! Making my mouth water thinking about these and looking at your picture!
