POTATO LATKES

- 2 eggs shopping list
- 1/3 cup all-purpose flour shopping list
- ¼ cup Grated onion shopping list
- ¼ tsp. ground black pepper shopping list
- 4 Large potatoes, peeled and shredded ( about 4 cups ) shopping list
- 3 Tbs. Lite margarine, divided shopping list
- 1 ½ cups sweetened applesauce shopping list
- Fresh chives, for garnish shopping list
How to make it
- Method:
- In a large bowl, combine eggs, flour, onion and pepper; set aside.
- Pat the shredded potatoes dry with paper towels. Stir into egg mixture. In a large non-stick skillet, over medium-high heat, melt 1 ½ Tbs. margarine. For each pancake, spoon 1/3 cup of the potato mixture into skillet, spreading into a 4-inch circle. Cook for 3 minutes each side or until golden; remove and keep warm. Repeat with the renaming mixture, using the melted margarine as need to make 12 pancakes. Serve hot with applesauce on the side. Garnish with chives.

Wonderful post! I make these on request from my husband at least once a month. We enjoy these with sour cream instead of apple sauce and bacon on the side! Making my mouth water thinking about these and looking at your picture!
