Chili Roasted Carrots

- 2 Tb canolia oil shopping list
- 1 tsp chili powder shopping list
- 1 tsp ground cumin shopping list
- 1/2 tsp salt shopping list
- 2 lbs carrots (10-12 medium),cut into 1/4' diagonal slices shopping list
- 2 Tb fresh cilantro shopping list
- 2 Tb lime juice shopping list
How to make it
- Position rack in lower third of oven;preheat to 450.
- Combine oil,chili powder,cumin and salt in med. bowl. Add carrots and toss well to coat.
- Spread out on rimmed baking sheet. Roast the carrots,stirring once,until tender and golden,20 to 25 mins.
- Toss carrots with cilantro and lime juice. Serve immediately.
