  • Method:
  • In a large bowl, combine pasta, chicken, onion, bell pepper, zucchini, olives, red pepper and salt; toss lightly. In small bowl, combine soup and lemon juice; mix well. Pour soup mixture over pasta salad; mix well. Sprinkle with Parmesan cheese and basil, if desired. Makes 8 servings.
  • Nutritional Values: Calories per serving: 258, Fat: 6g, Sodium: 380mg. If served with Wine, Vegetables and Bread add another 300 calories per serving.
  • Note: This is a Diabetic Friendly recipe.

    I like pasta occasionally, since I'm Roman Italian last name Spinucci growing up I had pasta till it was comming out of my ears. My family made pasta twice a week. On special occasions it was the first course to a meal.
