Leek and Gruyere Cream Soup

- 6 cups chicken broth shopping list
- 4 cups leeks, sliced shopping list
- 1 cup mushrooms shopping list
- 1 tsp. fines herbes shopping list
- 1 tsp. white pepper shopping list
- 1/3 cup flour shopping list
- 1 1/2 cups gruyere cheese, grated shopping list
- 2 tbls. parsley, chopped shopping list
- 1 cup whipping cream shopping list
How to make it
- In saucepan, add 4 cups chicken broth, leeks, mushrooms, fines herbes and pepper
- Bring to boil
- Reduce heat and simmer, covered until leeks are tender, about 10 minutes
- Cool
- In batches, put into blender and blend until smooth
- Return to saucepan and stir in 1 cup chicken broth
- IN mixing bowl, add 1 cup chicken broth and flour and mix until smooth
- Stir into leek mixture
- Add cheese and parsley, stirring to combine
- Return to low heat, stirring constantly until bubbly and cheese is melted
- Stir in whipping cream and heat through

sounds SOOOOOOOOOOOOO Comforting!
I can just imagine how I am going to LOVE making and tasting it when the 'Autumn Days' return!
