How to make it

  • In saucepan, add 4 cups chicken broth, leeks, mushrooms, fines herbes and pepper
  • Bring to boil
  • Reduce heat and simmer, covered until leeks are tender, about 10 minutes
  • Cool
  • In batches, put into blender and blend until smooth
  • Return to saucepan and stir in 1 cup chicken broth
  • IN mixing bowl, add 1 cup chicken broth and flour and mix until smooth
  • Stir into leek mixture
  • Add cheese and parsley, stirring to combine
  • Return to low heat, stirring constantly until bubbly and cheese is melted
  • Stir in whipping cream and heat through

    I love Fines Herbes, just wish it wasn't so expensive! The weather cooled down here yesterday and it's making me crave soup - this one sounds like a great place to start...love leeks and gruyere, and how can they not be fantastic together?!?
