How to make it

  • Using paper towels, squeeze liquid from artichokes, until artichokes are just slightly moist. Place artichokes in a bowl.
  • Add eggs and next 3 ingredients.
  • Combine mayonnaise and next 6 ingredients in a separate bowl; stir well.
  • Add mayonnaise mixture to artichoke mixture; fold the ingredients gently until thoroughly combined.
  • Cover and chill at least 2 hours.
  • Heat oil in a nonstick skillet over medium-high heat.
  • Form artichoke mixture into 1 1/2-inch balls; place in skillet, and flatten slightly with the spatula.
  • Cook 2 to 2 1/2 minutes on each side or until golden and slightly set. Transfer to a greased baking sheet.
  • Bake at 400° for 10 to 12 minutes or until done.
  • Serve with Spicy Rémoulade. See recipe in Alterations Section below

    You could try Silk's creamer as a substitute for the heavy cream. It's a thicker consistency than the regular soy milk. :)

    Thank you! This sounds very delish, for sure. I have been using a new mayo with omega-3 , flax oil, and canola oil. 50 cal/Tbspoon. Hellman's is 90 calories/ Tablespoon with yolks, etc etc. Hubbie doesn't even know I use the "Smart Balance" in the prepped foods lately. (don't even hold stock in the company!)
