Lemon Thins

- 1 cup sugar shopping list
- 1/2 cup unsalted butter, softened shopping list
- 1 large egg, lightly beaten shopping list
- 1/4 cup diced candied lemon peel shopping list
- 2 Tbsp fresh lemon juice shopping list
- 2 tsp lemon zest shopping list
- 2 1/2 cups all-purpose flour shopping list
- 1 tsp double-acting baking powder shopping list
- 1/4 tsp salt shopping list
How to make it
- In a large bowl, cream the sugar and butter until light and lemon colored.
- Stir in egg, candied peel, lemon juice and lemon rind.
- In a bowl, sift together the flour, baking powder and salt and stir the mixture into the sugar mixture.
- Form the dough into a 12-inch long strip on a doubled sheet of waxed paper.
- Roll it tightly into a 12-inch long roll using the wax paper as a guide.
- Chill dough, wrapped in waxed paper and aluminum foil, for at least 6 hours. At this point, the dough can frozen.
- Grease the baking sheets and preheat the oven to 400 degrees.
- Cut the roll into 1/4-inch slices with a sharp knife, arrange the slices 2 inches apart on the baking sheets, bake the cookies in the middle of the oven for 10 minutes.
- Transfer the cookies to a rack to cool.
