How to make it

  • In a large bowl, cream the sugar and butter until light and lemon colored.
  • Stir in egg, candied peel, lemon juice and lemon rind.
  • In a bowl, sift together the flour, baking powder and salt and stir the mixture into the sugar mixture.
  • Form the dough into a 12-inch long strip on a doubled sheet of waxed paper.
  • Roll it tightly into a 12-inch long roll using the wax paper as a guide.
  • Chill dough, wrapped in waxed paper and aluminum foil, for at least 6 hours. At this point, the dough can frozen.
  • Grease the baking sheets and preheat the oven to 400 degrees.
  • Cut the roll into 1/4-inch slices with a sharp knife, arrange the slices 2 inches apart on the baking sheets, bake the cookies in the middle of the oven for 10 minutes.
  • Transfer the cookies to a rack to cool.
