cooked chicken in the freezer

    Just a tip I developed, thought it might come in handy for people with some room in the freezer. Every week or two I roast a whole chicken. I eat a couple meals from the chicken, then I remove all the meat from the carcass and freeze the chunks in loosely packed freezer bags. When I need some chicken meat for a recipe I just take what I need and put the rest back in the freezer. I'll add the meat at the end of the recipe, the meat needs 3-5 minutes of steaming/braising to thaw or a quick trip to the microwave. If I plan things right I'll also make chicken stock from the bones and freeze that too.

    I've used this chicken for things like stirfry, curry, stews and paella. I'll thaw some chicken to add to a large green salad or chop it to make chicken salad sandwiches. I recently made a wonderful matzoh ball soup with the stock and chicken. It's also handy if you have a surpise guest.

    there is often more food in there than in my fridge...lol...
    i keep frozen soups, sauce, pesto, veggies, etc...

    my mother even taught me to freeze raw almonds and italian cookies to keep them fresh...

    i always wonder where people are getting this 'cooked chicken' they are adding to recipes...i guess this is the answer...

    As with softgrey, I'm also well acquainted with my freezer. I even freeze bacon rashers in separate freezer bags, that's how sad I am! I do a big shop once a fortnight and freeze all sorts of things. I freeze everything in individual bags (or cdontainers, depending on what it is) and use them as required. Very handy for the single cook!

    We do the bacon also.. I also make the sausage patties.. the ones you buy are to costly! And I made a deal with my daughter... she loves bonless chicken breasts.. and was paying a pretty penny for them.. so I told her to pick up the ones with the bones.. I bone them for her, bag the bones to freeze until I have a big kettle... Then make my stock. I freeze in quart ziplock bags flat and when solid... they stack and take up little room.
