Gluten-free noodles/pasta

    I love noodles! You can do so much with them...but gluten-free noodles are expensive and hard to find where I live. Also, I've noticed that the textures vary dramatically with the different types of gluten-free noodles...from bean noodles to rice noodles, and I've even seen variation between brown and white rice noodles! Now, I agree that spaghetti squash is awesome in a lot of Italian pastas, but it doesn't work so well in, say, a more eastern dish.
    So...who prefers what gluten-free noodles for what uses? And does anyone have any recipes for making gluten-free noodles at home?

I also like Dr.Schar Capelle d' Angelo [ little tiny noodles like you find in the dry Lipton noodle soups] The regular spag is ok too .. I like angel hair so I am having a little trouble adjusting to ''fat'' spag. It is important to cook these noodles separately and rince well before adding to what ever you are cooking..

    I've made GF pasta at home too... just following my great-grandmothers recipe and substituting GF flour blend (the one you prefer) and xanthan gum (1 tsp per cup of flour).

    It's HARD to roll homemade GF noodles thin enough for many of my tastes - but the thick homemade noodles are the ONLY ones for our post-Turkey dinner meals! lol.

Please post the recipe if it's not a 'secret '. I have some great recipes that I'm sworn to never to tell.. that's the pits because I love to share.....or maybe it's because I'm a blabber mouth!!!!

    The absolutely best noodles are the Glutino tagliatelle noodles. There is absolutely no difference in taste, texture or appearance between these and the egg noodles you grew up with. They make fantastic tuna noodle casserole that I defy anyone to be able to tell they're not gluten-full! I think you will be very happy with these.

    Hint for cooking rice noodles-
    I've found that most rice pasta directions have you boil it to soften and you end up with starchy water and horrible noodles. Try throwing the noodles/pasta in boiling water then turning down to the lowest heat and cover, letting the pasta absorb the water. I've had much better results doing it this way even though it does take a little longer. (less problems with brown rice pasta, but it all seems to depend on brand)
