Casserole Idea??

    I am taking a meal to a single mother of adult twin boys with autism. She had a ruptured appendix and had to be hospitalized this past week. She came home today but has to eat softer foods. Does anyone have a casserole that will meet this criteria? I found a chicken noodle casserole recipe on-line but have never tried it. I guess I will make two one for her and one for us. Hope it's good.

    What about a simple non spicy lasagne. She can have some for dinner and freeze individual servings. You could also make a simple baked ziti. Hamburger, noodles, cheese, Ragu spaghetti sauce...

    There are a couple of groups on this site, dedicated to casserole recipes.

    Do you know their likes and dislikes? My experience.. is, see if you can find out. Some might not be meat eaters.. allergic to cheese or mild products. If not.. there are some really good recipes here... I was just looking at one from Gem... it is so good!

    Thank you, line for that link. I'm making it this evening. I like the idea of adding worchestershire sauce and onion to the meat. Maybe hot sauce on the side...YUM!

    mbalmr, you should post it here anyway. This group is for recipes for everyone to share and I am sure I am not the only one who will need and want to make a soft food casserole. Besides, I know my family will love it, it has been a long time since I have made a tuna noodle casserole and mine recipe doesn't have cheese, and they love cheese...so there you go.

    While we are on the casserole bandwagon, let me ask does the hamburger casserole keep well and reheat easily? Kid and I take meals once a month to the Ronald McDonald house and we need casserole type things that the families can just scoop out of the pan and reheat in the microwave. The Ronald McDonald house saved me once and I'm having the kid practice cooking for the families there as part of her volunteer requirements for school. I'm tired of watching her fuss over lasagna and complain about how hard it is....the little stinker. She doesn't complain about the cookie baking. LOL We have done mac/ham/and cheese, went over well. We tried tuna casserole with very limited success. Shepards Pie went over well but it was a mess to reheat and serve,not eveyone got equal portions of potatoes and meat.

Now, he can eat his own weight in food every day, so either he ate what was left, or he's telling the truth and it's very popular, but I think this casserole might qualify as a "softer, gentler" food? I'll post it, and the cheese lover's tuna noodle thing. I made a tater tot casserole last night that was pretty good, but needs tweaking. It was too salty for my taste, and I love salty food. Once I "perfect" that, I'll post it also.
